Although many split pea soup recipes use ham for added flavor, this vegetarian and vegan split pea soup packs in the spices, including thyme, sage and bay leaves for a lower fat and cholesterol version of classic split pea soup. As an added bonus, with all those herbs and spices, you'll find that you need very little salt to add the flavor, making this a good choice for those on a low-salt or reduced-salt diet too (though check your bouillon cubes, as those can be high in sodium).
Soup is always an easy choice to make in a crockpot. With no added oil, this soup is fat-free and very low-calorie, with less than 250 calories per serving.
Need it to be gluten-free? Omit the bouillon cubes and use a gluten-free vegetable broth.

Ingredients
2 cups green split peas
8 cups water or vegetable broth
3 vegetarian bouillon cubes
2 potatoes, chopped
2 ribs celery, chopped (optional)
2 carrots, sliced
1 onion, diced
2 cloves garlic, minced
1 tsp dry mustard
1 tsp cumin
1 tsp sage
1 tsp thyme
3 bay leaves
salt and pepper to taste
Prep Time: 10 minutes
Slow cook time: 240 minutes
Total Time: 250 minutes
Yield: 8 servings
Preparation
Combine all ingredients in a crock pot or slow cooker. Cover and cook on low for at least 4 hours, or until peas are soft.
Remove bay leaves before serving and adjust seasonings to taste.
Makes 8 servings of soup.

Lentil Vegetable Soup Recipe:-
Vegetarian lentil soup is low in fat, but high in fiber, protein and flavor! This vegetarian and vegan lentil soup recipe calls for lots of healthy vegetables, including spinach, so it really is a balanced vegetarian meal in itself.
Ingredients
2 tbsp olive or vegetable oil
2 stalks celery, chopped
3 carrots, chopped
1 onion, diced
4 cloves garlic, minced
3 bay leaves
8 cups water or vegetable broth
1 3/4 cups green lentils
2 potatoes, chopped
1 bunch spinach, chopped
1 tsp salt
3 tbsp red wine vinegar
Preparation
In a large soup or stock pot, cook the celery, carrots, onion and garlic in oil until soft, about 10-12 minutes.
Add water or vegetable broth, bay leaves and lentils. Simmer over medium heat for 30 minutes.
Add potatoes and cook for 10 more minutes, then add spinach and cook for another minute or two, just until spinach is wilted.
Remove from heat and add salt and red wine vinegar, stirring to combine.
Easy Homemade Vegetable Soup:-
Making a basic vegetable soup from scratch is a great skill for any home chef, whether you're vegetarian or vegan or not. Vegetable soup is great for a cold night, and of course homemade soup from scratch is always best!
Ingredients
1 tablespoon olive oil
1/2 large onion, chopped
2 ribs celery, chopped
2 carrots, sliced
2 cups mixed chopped vegetables (try cauliflower, zucchini, green beans)
1 teaspoon salt
1 teaspoon thyme
1 teaspoon oregano
1 bay leaf
8 cups water and 3 cubes of vegetable bouillon OR 8 cups vegetable broth
1 14-ounce can tomatoes
Prep Time: 10 minutes
Cook Time: 20 minutes
Total Time: 30 minutes
Preparation
Heat oil in a large soup or stock pot. Add onion, carrots and celery. Heat, stirring, for 3-4 minutes, until onions are soft. Add the rest of the vegetables and heat for just another minute or two.
Add salt, thyme and oregano, stirring to coat the vegetables well.
Add bay leaf, water or vegetable broth and bring to a simmer. If using bouillon cubes, add and stir to make sure they dissolve.
Add tomatoes, stir, and allow soup to simmer until all the vegetables are cooked, about 8-12 minutes.
Adjust seasonings to taste.
Tomato and Barley Vegetable Soup Recipe:-
If you're looking for a nourishing beef-free barley soup recipe, most recipes use mushrooms to pair with the barley, but this meatless barley soup uses tomatoes and the standard soup ingredients of carrots, celery, onions and garlic to carry the flavor. There's little additional seasoning, so this tomato soup recipe is simple, easy, and nourishing.
Ingredients
1 tbsp olive oil
2 ribs celery, chopped
2 medium carrots, chopped
1/2 onion, chopped
2 cloves garlic, minced
3 cups good quality vegetable broth
1 16-ounce can diced tomatoes (do not drain)
1 cup pearl barley
1/2 tsp Italian seasoning
2 cups spinach leaves (optional)
salt and pepper
Preparation
In a large soup or stock pan, heat onions and garlic for a minute or two, then add carrots and celery. Heat for 4-5 minutes, to start vegetables cooking.
Add tomatoes (do not drain), vegetable broth, barley and Italian seasoning, stirring to combine. Bring to a boil, cover, then reduce to a medium-low simmer.
Cook for 30-40 minutes, or until barley is cooked and carrots are soft. Stir in spinach, heat for one more minute, then turn off heat. Season generously with salt and pepper.
