What You'll Need
1 can (10 3/4 ounces) Campbell’s® Condensed Cream of Chicken Soup (Regular or 98% Fat Free)
1/2 cup milk
1/4 teaspoon black pepper
1 cup broccoli
1 cup sliced carrots, cooked
1 cup cut green beans, cooked
1/4 cup red pepper strips, cooked (optional)
1 can (12.5 ounces) Swanson® Premium White Chunk Chicken Breast in Water, drained
1 1/3 cups (2.8 ounce can) french fried onions
How to Make It

    Stir the soup, milk, black pepper, broccoli, carrots, green beans, red pepper, chicken and 1/2 can onions in a 1 1/2-quart casserole.

    Bake at 350°F. for 20 minutes or until the chicken mixture is hot and bubbling.  Stir the chicken mixture.  Sprinkle with the remaining onions.

    Bake for 10 minutes or until the onions are golden brown.

Tasty Fresh Vegetable Recipes from Your Hydroponic Garden

Everyone loves the taste of fresh vegetables straight from the garden, but unfortunately the summer and fall harvest seasons are much too short. The good news is that you can enjoy the same wonderful flavor year round from a hydroponic garden in your home. With a simple grow box, nutrients, and plant lights you can enjoy vegetables that taste as good as anything you can grow in the soil.

One of the most popular vegetables to grow hydroponically is tomatoes. In North America in the wintertime the tomatoes you can buy at the grocery store are usually imported from Mexico, or are grown in giant commercial greenhouses and shipped. The tomatoes are picked before they are ripe, the texture is tough and the flavor is bland. But if you have a tomato garden in your grow room you can wait to pick them until they are so ripe they are about to burst with flavor.
Basil is an herb that also grows well in hydro. It doesn’t take up much space and grows a pretty little plant that is easy to maintain. It is also a very versatile herb that goes well in Italian dishes such as tomato-basil pasta sauce or on a Caprese salad with mozzarella cheese, fresh sliced tomatoes, and sprinkled with basil.

Another plant that grows really well in your indoor garden is pepper. It is happy to grow in a media like clay pellets where its roots can dig in firmly and hold the plant up straight under the weight of the heavy peppers. Just put the grow light about 8 to 10 inches above the top of the plant so the heat from the lamp doesn’t burn the leaves and raise the light as the plant grows. Give it 10 or 12 hours of light and it is happy.
You can make a wonderful roast pepper dish that is easy to make and tastes delicious. From your garden select 3 fresh peppers, a pint of cherry tomatoes, and a half a cup of basil. Cut the peppers in half and clean out the seeds, then fill the pepper halves with tomatoes and place them in a baking dish. If you have any mozzarella left over from your Caprese salad add a little bit to each pepper. Chop up the basil in a bowl and add 8 chopped garlic cloves, cover the tomatoes with the garlic and basil, then salt and pepper to taste.

Cover the peppers with aluminum foil and put the dish in the oven. Bake at 400 degrees for 15 minutes, then remove the foil and put the dish in to bake for another 15 minutes. Take the peppers from the oven and sprinkle them with about a tablespoon of herb vinegar, then enjoy. This dish is very healthy, with low carbohydrates and full of nutrients.

1 pk Knorrs Vegetable soup mix
2 cups Sour Cream (16oz)
1 cup Mayonnaise
8 oz can Water Chestnuts~drained and chopped
3 Green Onion shoots
1/4 cup Vidalia Onion ~finely diced
1 Bread Bowl ~ sour doe or pumpernickel is great!

Mix sour cream and Mayo. Add soup mix, water chestnuts, green onions, vidalia and blend well.Cover and refrigerate for 2 hours. Serve with vegetables or in a bread bowl.



Noted: This is a Knorr's recipe without spinach. I prefer it without, I think it tastes better!  But that is my personal preference. Feel free to add spinach if that is your preference.

Healthy Yogurt Vegetable Dip

As you all know, I’ve been trying to eat a lot more fruits and vegetables lately!  I’m always lookin’ for ways to add them to my diet.  I love to add veggies to my eggs, protein shakes (spinach), salads or just enjoy them on their own!  AND, when I eat them on their own, I love to dip them in a yummy dip!

This dip happens to be yummy AND healthy!  Woo hoo.  I basically took my mom’s vegetable dip recipe and subbed Greek yogurt for the mayo.  Yay.
(makes 2 cups, 16 servings)

    1 C. fat free plain Greek yogurt
    1 C. low fat sour cream
    1/2 Tablespoon dried parsley
    1/2 teaspoon dill weed
    1/2 teaspoon onion powder
    1/2 teaspoon seasoned salt

Mix everything together and refrigerate for at least an hour before serving.

And it was so.   God saw all that he had made, and it was very good.' (NIV)  Let no animal suffer or die that we may live!  (d-32)For burger lovers who want to cut back on meat, vegetarian burgers can be a tasty and healthful way to recreate the burger experience. In this week’s Recipes for Health, Martha Rose Shulman offers five ways to create vegetarian burgers at home. She writes:

    I wanted to work on veggie burgers because I have never had a commercial one that I liked. They all taste overprocessed to me, with no fresh flavors. I’ve had much better luck making burgers from Lukas Volger’s excellent cookbook “Veggie Burgers Every Which Way.” I especially like his bean and vegetable combos.

    Puréed beans make a great binder for grain and vegetable burgers, and an egg added to the mixture will help to hold it together. (If you want to keep them vegan you can, though you have to be careful when you flip the burgers over because they tend to fall apart.) I found that all of these burgers somehow tasted better a day after they were assembled ― the flavors had gelled, the burgers held together better, and a burger that seemed a bit dry to me right after cooking did not seem so dry the next day when reheated. I can’t tell you why.

    Like Mr. Volger, I found the best way to cook these vegetarian burgers was to brown them on one side in an ovenproof frying pan, then turn them and stick the pan in a 375-degree oven for 10 minutes. Turning can be tricky, but if the burgers do crumble, just patch them back together with your spatula, apply a little pressure and put the pan into the oven.

Here are five new recipes for homemade veggie burgers.

Beet, Rice and Goat Cheese Burgers: Make these ahead for quick meals through the week and reheat in a medium oven or a frying pan.

Curried Lentil, Rice and Carrot Burgers: Indian spices liven up these burgers. The turmeric offers bonus antioxidant health benefits, but even without it, they’re in abundance in this recipe, with all the carrots and ginger.

Quinoa and Greens Burger: Rainbow quinoa is a great choice for this recipe — because it’s pretty, and because the red, black and golden quinoa grains all have slightly different textures.
Preparation

            This is a great recipe for using asparagus left over from the previous day; or the asparagus vegetable salad can be made with asparagus that has been steamed for a couple of hours before you intend to serve the salad and allowed to chill in the refrigerator.

            Cut the tip ends of the asparagus to lengths slightly less than 1/2 the width of the salad plate or bowl, and set aside.  Cut the remaining stem ends into bite sized pieces and mix into the tossed salad.

            Place the tossed salad on individual serving plates or in individual bowls.  Arrange the asparagus tips in a star-burst pattern on the top of the tossed salad.

            Cut the tomatoes into wedges and place a wedge between the asparagus tips.

            Serve with your favorite salad dressing.  Enjoy!

3 red bell peppers, seeded and halved
3 yellow squash (about 1 pound total), sliced lengthwise into 1/2-inch-thick rectangles
3 zucchini (about 12 ounces total), sliced lengthwise into 1/2-inch-thick rectangles
3 Japanese eggplant (12 ounces total), sliced lengthwise into 1/2-inch-thick rectangles
12 cremini mushrooms
1 bunch (1-pound) asparagus, trimmed
12 green onions, roots cut off
1/4 cup plus 2 tablespoons olive oil
Salt and freshly ground black pepper
3 tablespoons balsamic vinegar
2 garlic cloves, minced
1 teaspoon chopped fresh Italian parsley leaves
1 teaspoon chopped fresh basil leaves
1/2 teaspoon finely chopped fresh rosemary leaves

Directions

Place a grill pan over medium-high heat or prepare the barbecue (medium-high heat). Brush the vegetables with 1/4 cup of the oil to coat lightly. Sprinkle the vegetables with salt and pepper. Working in batches, grill the vegetables until tender and lightly charred all over, about 8 to 10 minutes for the bell peppers; 7 minutes for the yellow squash, zucchini, eggplant, and mushrooms; 4 minutes for the asparagus and green onions. Arrange the vegetables on a platter. The key to getting those great grill marks is to not shift the vegetables too frequently once they've been placed on the hot grill.

Meanwhile, whisk the remaining 2 tablespoons of oil, balsamic vinegar, garlic, parsley, basil, and rosemary in a small bowl to blend. Add salt and pepper to taste. Drizzle the herb mixture over the vegetables. Serve the vegetables, warm or at room temperature.

It's putting the sauce on AT THE END, AFTER COOKING; instead of a pre-cook marinade, that was the game-changer for me! I use Giada's dressing recipe a lot, but also toy with lots of other herb/vinegar variations as well. This technique has forever elevated humble grilled & roasted veggies.

Absolutely fantastic taste! Used red and green pepper, zucchini, Chinese eggplant, baby portobello mushrooms, and scallions. The dressing really adds a great flavor to the vegetables. Terrific dish and it paired really well with our grilled steak.

Delicious, beautiful and impressive on a large platter. I made this recipe for a small dinner party expecting leftovers for use the next day, but to my surprise all of it was gone! It was so tasty! Great recipe, Giada.

I use many of the same vegetables, place them all in a ziploc bag add seasoning and oil. These will stay good for days like this. I prepare a huge bunch before going camping, it lasts for several meals, everyone loves them. Grill as needed, fresh and hot each meal.

I used the vegetables I had on hand, which were zucchini, yellow squash, onion, and mushrooms. The light sauce tossed in was delicious. I didn't have parsley so I omitted, but next time will use some from my garden. This will be my go to grilled vegetable recipe!

Loved this. I down scaled it and didn't use all the types of veggies, but the ones I did use came out perfectly. In fact, I brought the veggies and the topping to a friend's house to make on the grill, but the grill wasn't working so we just roasted them in a 450 oven. With the basalmic/herb topping it was just right and enjoyed by all - I always wanted something more exciting to do with roast vegetables, and this is it. The Japanese eggplant is a must!

This recipe is amazing. My daughter told me about it. I actually left out the Italian parsley and the basil (didn't have them on hand, but did use the rest including the fresh rosemary and it was delicious!! Will use this for veggies over and over. Can't wait to make it the next time I have guests over!

Pasta Salad with Mediterranean Vegetables Recipe

Ingredients


    1 medium zucchini, cut in half lengthwise
    1 medium yellow squash, cut half lengthwise
    1 medium red bell pepper
    1 medium green bell pepper
    Salt and black pepper
    Olive oil
    ½ cup shredded fresh spinach leaves
    ½ lb boiled pasta
    2 tbsp. Sabra Spanish Eggplant


    Yield 2 servings

Prep time: 10 minutes

Cook time: 20 minutes

    Drizzle squash and peppers with olive oil and season with salt and pepper.

    Grill, turning frequently until outer skins of peppers are charred and squash is almost cooked through.

    Remove from grill and allow to cool.

    Peel roasted peppers and remove stem and seeds.

    Cut peppers and squash into 1-inch cubes.

    In a large bowl, combine grilled vegetables with pasta, Sabra Spanish Eggplant.

    Garnish with ½ cup shredded fresh spinach leaves.

    Serve warm or room temperature.

Raw Vegetable "Pasta" with Tomatoes and Herbs

Ingredients:

    2 zucchini squash, shaved thinly lengthwise with a vegetable peeler
    2 yellow summer squash, shaved thinly lengthwise with a vegetable peeler
    Sea salt and pepper, to taste
    1 tablespoon extra virgin olive oil
    1 cup cherry or grape tomatoes, halved
    5 oil-packed sundried tomatoes, drained and thinly sliced
    1/2 shallot, finely chopped
    1 clove garlic, finely chopped
    1 tablespoon finely chopped basil
    1 teaspoon finely chopped oregano


Method:

In a large bowl, gently toss together all ingredients. Transfer to a platter and serve immediately.
I assure you this is not becoming a food blog. But ever since I started feeling better during this pregnancy, and as I’m nearly finished with my third trimester, it seems all I can think about is food. Food. Food. Food. My second chin can confirm that this is, in fact, true. That being said, I’ve discovered my new all-time favorite pasta recipe that I’ve already made 4 times in two weeks. Even Ben, who won’t touch a pasta that’s not covered in meat, downed two large bowls of this “vegetable” pasta the other night. You could even add grilled chicken if you wanted.

Summertime Healthy Vegetable Pasta
package of spaghetti or linguini
1/4 cup extra virgin olive oil
3/4 cup grilled zucchini chopped
3/4 cup grilled yellow squash chopped
3/4 cup chopped cherry tomatoes
1/4 cup ripped basil
5 cloves of garlic
1/4 cup grated parmesan cheese
dash of red chili powder
salt and pepper to taste
Summer Spaghetti: Easy, Healthy Vegetable Pasta

Ingredients

    package of spaghetti or linguini
    ¼ cup extra virgin olive oil
    ¾ cup grilled zucchini chopped
    ¾ cup grilled yellow squash chopped
    ¾ cup chopped cherry tomatoes
    ¼ cup ripped basil
    5 cloves of garlic
    ¼ cup grated parmesan cheese
    dash of red chili powder
    salt and pepper to taste

Instructions

    Slice the zucchini and squash length wise and lightly season with olive oil and salt and pepper–getting them ready for the grill.
    Slice your yummy tomatoes.
    Roughly chop your garlic cloves.
    Cook the pasta al dente (approximately 9 minutes). Be sure to reserve about a cup of the water from the boiled pasta.
    Grill the zucchini and squash until grill marks appear but veges are still firm.
    Chop firm veges.
    In a large sauce pan, add the olive oil and garlic. Sautee the garlic until soft but not brown.
    Add the grilled veges, the tomatoes, the basil and the chili powder to the saucepan and cook on med-high heat.
    Salt and pepper to taste. I don’t like my veges mushy, so I cooked everything until soft, but still firm in the center–only a few minutes. If you want your pasta to have more of a kick, you can add more chili powder.
    Add pasta and grated parmesan cheese. Add about half of the cup of reserved water and toss the pasta in the saucepan. Add the remaining reserved water only if needed
