Traditional German vegetable recipes ("Gemüse") can range from the very healthy to those heavily loaded with butter, bacon, and cream (and often overcooked as well).

The all time favorite among my German vegetable recipes is here as well. It's THE traditional of what would be considered the BEST vegetable recipes, the German red cabbage recipe.

This one always brings smiles to my family's faces. This, as well as many others, are sure to please even the finickiest eater in your family. And, what makes this so special is that it fits with almost any meal (and looks so pretty, too!
Easy Asparagus Recipe

This easy asparagus recipe ("Gebackener Spargel") is a great company dish that will find its way to your everyday menu as well. Quick to prepare, its delicious flavor is a great addition to any meal.

Combining the asparagus with carrots is the idea from my son, Rich, whose easy recipes have inspired me as well.
Ingredients:

    2 lbs fresh asparagus
    1 lb carrots
    1/4 to 1/2 cup seasoned bread crumbs
    1/4 to 1/2 cup olive oil
    1/4 cup ground Parmesan cheese
    pepper, freshly ground

Instructions:

    Preheat oven to 400° F.
    Pour about 1/4 cup olive oil onto a cookie sheet with a rim.
    Wash asparagus thoroughly and lay on towel to dry. Snap off bottom end, (peel stem if desired), and lay onto cookie sheet.
    Peel carrots and cut into strips similar in size to asparagus. Layer onto or beside asparagus.
    Drizzle olive oil over all, gently turning vegetables so that they are all coated with oil.
    Sprinkle bread crumbs and then Parmesan cheese over vegetables.
    Season with freshly ground pepper.
    Bake for about 12 to 15 minutes, until done to your liking.
    Serves 4 - 6. Shown above served with roast pork and noodles.

Late spring is asparagus season in Germany. Many restaurants even have a special "Spargel" menu that only has asparagus dishes on it. Most asparagus sold in Germany is the white variety. It needs to be peeled and is cooked longer than the green variety that's sold in Canada and the US.

If you want to roast the white asparagus, be careful that you don't let it brown. It'll turn bitter. The green asparagus, on the other hand, tastes absolutely delicious when browned!

That's right, a salad. Mix with baby spinach or kale. Add a dressing .... check out the Oma says below as well as her more traditional Brussel Sprouts recipe.
Roasted Brussels Sprouts Recipe

Ingredients:

    1 lb. fresh Brussels sprouts
    3 tbsp olive oil
    3 - 4 slices bacon
    salt, pepper

Instructions:

    Preheat oven to 400 F.
    Clean Brussels sprouts, discarding outer loose leaves. Cut in half.
    Put the Brussels sprouts into a plastic bag. Pour in olive oil and season with salt and pepper. Shake gently to coat sprouts.
    Pour sprouts onto cookie sheet (with a rim) spreading them out into one layer.
    Dice bacon and sprinkle over the sprouts.
    Roast for 30 - 35 minutes, stirring every 10 minutes or so, until golden brown on the outside and tender on the inside. Any leaves that are loose will be crispy and brown (extra delicious!)
    Serves 4

Hints:

    For a non-German addition, sprinkle with Parmesan cheese during the last 5 minutes.
